Stacked Tortilla Breakfast Casserole

Stacked Tortilla Breakfast Casserole is a fun, easy, and cheesy casserole that can be made ahead!  Layers of tortillas are stacked with bacon, sausage, and ham for a mouthwatering brunch!

  • 1 Pound Bacon, Cooked and Crumbled
  • 1 Pound Pork Sausage. Cooked and Crumbled
  • 1 Pound Package Diced Ham
  • 10 8 inch Tortillas, Cut in half
  • 8 Large Eggs
  • 1 1/2 Cups Milk
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Hot Sauce
  • 2 Cups Shredded Cheddar Cheese
  • 1 Cup Mozzarella or Monterrey Jack Cheese


  1. Butter a 9×13 inch baking dish with 2 teaspoons of butter or spray with non-stick cooking spray.
  2. Layer 1/3 of the tortillas in the bottom of the baking dish and top with the cooked bacon and 1/3 of the cheese.
  3. Layer another 1/3 of the tortillas in the dish and top with the cooked and crumbled sausage and another 1/3 of the cheese.
  4. Repeat with the last of the tortillas, the ham, and 1/3 of the cheese.
  5. In a large bowl whisk together the eggs, milk, salt, pepper, garlic powder, and hot sauce.
  6. Pour the egg mixture evenly over the casserole.
  7. Cover and refrigerate overnight if desired, or bake right away.
  8. When ready to bake preheat the oven to 350 degrees.
  9. Bake, covered with foil oven for 45 minutes. Uncover and bake for 20 more minutes until cheese is fully melted and casserole is cooked through.
