Make Ahead Breakfast Burritos


  • 12 – 8 inch tortillas
  • 12 eggs
  • 1/4 cup milk optional
  • 1 pound bacon (can use ham or sausage)
  • 15 ounce bag frozen tater tots
  • 1-2 cups shredded cheddar cheese


  1. Preheat oven and cook tater tots according to package directions
  2. Cook bacon, and tear into bite sized pieces.
  3. Scramble the eggs (with milk if desired).
  4. Warm tortillas slightly (10 seconds) to prevent tearing when rolling the burritos.
  5. Lie tortillas out on a clean surface and top with scrambled eggs, bacon, tater tots, and cheese.
  6. Roll each tortilla up burrito style and place onto a large baking sheet.
  7. Place burritos into freezer for 1 hour.
  8. Burritos may be individually wrapped after being frozen in plastic wrap, then placed in a plastic zipper bag. Or, you can place the frozen burritos directly into plastic zipper bag.
  9. Keep burritos frozen until ready to use.
  10. Microwave one burrito for approximately 1-2 minutes before serving.
