Easy Honey Roasted Carrots

Easy Honey Roasted Carrots are such a flavorful and simple side dish for weeknight meal or the holidays!  Carrots are roasted to tender perfection with honey, garlic, and a simple blend of seasonings.

  • 32 Ounces Baby Carrots
  • 2 Tablespoons Butter, Melted
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 3 Cloves Garlic, Minced
  • 1/2 Teaspoon Italian Seasoning
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 2 Teaspoons Chopped Parsley, Optional


  1. Preheat oven to 425 degrees.
  2. In a large bowl whisk together the melted butter, olive oil, honey, minced garlic, Italian seasoning, salt, and pepper until combined.
  3. Add the carrots to the bowl and stir with a large spoon to coat.
  4. Spread the carrots out evenly onto a large, rimmed baking sheet.
  5. Bake in preheated oven for 25-30 minutes until carrots are fork tender.
  6. Sprinkle with parsley if desired and serve immediately.
