Crispy Roasted Garlic Parmesan Potatoes


  • 4 Cups Yukon Gold Potatoes Diced
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1/3 Cup Parmesan Cheese Freshly grated


  1. Preheat oven to 425 degrees.  Spray a large baking sheet with non-stick cooking spray and set aside.

  2. Wash the potatoes and cube into 3/4 inch pieces.  Place potatoes onto prepared baking sheet.

  3. Drizzle the potatoes with the olive oil.  Sprinkle with the garlic powder, salt, and pepper. Use a large spoon (or your hands) to mix potatoes and seasonings until well combined.

  4. Bake the potatoes in preheated oven for 20 minutes.

  5. Remove potatoes from oven and stir/toss with a spoon or tongs.

  6. Sprinkle the potatoes with the grated parmesan.  Return to oven and cook for 15 more minutes, until golden brown and crispy.
